Tender meat from the back and shoulders of the pigs is delicately salt cured and matured for minimum 5 months. Corsican Coppa has a distinctive deep red colour and combines the gamey, smokey and peppery flavours of the local pigs with sweet nutty tones from their diet of chestnuts and acorns. An impressive and eye catching addition to a charcuterie board.
